Smoky White Bean Quesadillas

What you need: 

1 cup white beans, rinsed and drained
1/2 cup tomatoes, chopped
1/3 cup nutritional yeast
few drops liquid smoke
garlic powder, to taste
1/2 teaspoon salt
pepper or cayenne pepper, to taste
4 whole wheat tortillas
cilantro, to garnish
salsa, to garnish

What you do: 

1. Blend together the white beans and tomatoes until very smooth. Add nutritional yeast, liquid smoke, garlic powder, salt and pepper. Blend again until well combined and smooth.
2. Heat a dry nonstick skillet over medium-high heat. Put a tortilla into skillet, and spread 1/2 the bean mixture on the tortilla, then top with another tortilla.
3. Cook over medium heat until crisp on one side, then flip and repeat on the other side.
4. Once it is cooked and the bean mixture is warm and gooey, remove from pan, slice into 6-8 wedges. Repeat with the other tortillas. Serve with cilantro and/or salsa.
Source of recipe: I came up with this recipe with the last little bits of things in the fridge and the last 1/3 cup nutritional yeast!

I added chili powder and some red pepper flakes. This was delicious, thank you for sharing.  :)>>>

Next time I make this, I will add sauteed onions and bell peppers and use this as if it's cheese sauce.

I was skeptical of a quesadilla minus the queso but this was yummy!  I added some cumin to the beans and some arugula. I will make this again.

....Oh my lord...you are a genius! This was so fantasic! Who knew a few ingredients could become so awesome. It does not taste cheesey what so ever, but it is the great taste explosion my tongue has ever experienced....I will be making this all the time :)

:D Ohhhhh Myyyyyy! By far the best thing I've eaten in a while! I thought hopfrog's picture of the open faced quesadilla looked so good I decided to make them that way. I sauteed onions, orange peppers, black olives, sweet corn, fire roasted tomatoes, and spinach together and put that on top of the bean mixture on a burrito wrap. I went a lil crazy and kept adding things to the saute pan so in the end my attempt at this recipe morphed from a quesadilla to a huge Burrito thing I couldn't finish in one sitting. Sooo tasty. Love love LOVE this recipe!  :)>>> This will become a staple in our home. Thanks so much for sharing!

VERY, VERY GOOD!!!!! I added a bit of beer to the bean mixture, and some sauteed red onion, as i always have to play with every recipe. Thank you for this wonderful recipe which will now be a staple in our house!
