Smoky White Bean Quesadillas
1 cup white beans, rinsed and drained
1/2 cup tomatoes, chopped
1/3 cup nutritional yeast
few drops liquid smoke
garlic powder, to taste
1/2 teaspoon salt
pepper or cayenne pepper, to taste
4 whole wheat tortillas
cilantro, to garnish
salsa, to garnish
1. Blend together the white beans and tomatoes until very smooth. Add nutritional yeast, liquid smoke, garlic powder, salt and pepper. Blend again until well combined and smooth.
2. Heat a dry nonstick skillet over medium-high heat. Put a tortilla into skillet, and spread 1/2 the bean mixture on the tortilla, then top with another tortilla.
3. Cook over medium heat until crisp on one side, then flip and repeat on the other side.
4. Once it is cooked and the bean mixture is warm and gooey, remove from pan, slice into 6-8 wedges. Repeat with the other tortillas. Serve with cilantro and/or salsa.
Source of recipe: I came up with this recipe with the last little bits of things in the fridge and the last 1/3 cup nutritional yeast!

Next time I make this, I will add sauteed onions and bell peppers and use this as if it's cheese sauce.
I was skeptical of a quesadilla minus the queso but this was yummy! I added some cumin to the beans and some arugula. I will make this again.
As my meat - hubby said, "Wow, this is so good I could eat the filling with a spoon!"

....Oh my lord...you are a genius! This was so fantasic! Who knew a few ingredients could become so awesome. It does not taste cheesey what so ever, but it is the great taste explosion my tongue has ever experienced....I will be making this all the time :)

:D Ohhhhh Myyyyyy! By far the best thing I've eaten in a while! I thought hopfrog's picture of the open faced quesadilla looked so good I decided to make them that way. I sauteed onions, orange peppers, black olives, sweet corn, fire roasted tomatoes, and spinach together and put that on top of the bean mixture on a burrito wrap. I went a lil crazy and kept adding things to the saute pan so in the end my attempt at this recipe morphed from a quesadilla to a huge Burrito thing I couldn't finish in one sitting. Sooo tasty. Love love LOVE this recipe! :)>>> This will become a staple in our home. Thanks so much for sharing!

VERY, VERY GOOD!!!!! I added a bit of beer to the bean mixture, and some sauteed red onion, as i always have to play with every recipe. Thank you for this wonderful recipe which will now be a staple in our house!
At first, I thought it tasted like pureed beans and tomatoes. Feh. Then after I'd eaten the entire quesadilla, I wanted more.
I ate it plain. Probably would have enjoyed it more a little souped up. Live and learn.

How have I not seen this recipe before? Luckily I caught furrysgirl's lovely picture of them in the sidebar today and tried them out tonight! They're so easy and so tasty. I followed the recipe pretty much exactly but used onion powder instead of garlic powder. I didn't have salsa or any other dips, just half an avocado. It was good on it's own but topped with avocado slices it was amazing.
The bean mixture was good cold too as a dip. Thanks for the recipe and the pics!
