Soft-Serve Ice Cream
1/2 cup linseeds (flax seeds)
1 cup full cream coconut extract
3 cans peaches
4 tablespoons maple syrup
1/8 teaspoon lemon / lime juice
1. Grind linseeds in blender till very fine.
2. Put linseeds with rest of ingredients in food processor - blend for 3-5 minutes. It will result in a creamy, thick fluffy soft-serve.
3. Freeze overnight.
4. Let sit in fridge 1-2 hours before serving. Do not heat to preserve nutrition in linseeds. Great for excema! My niece said it tastes like Weet-Bix -then didn't stop to for a breath to gobble her cone down. I think it tastes like coffee icecream. Enjoy!
