South Western Potatoes

What you need: 

2 large potatoes (or 4 small ones)
dried basil
1/2 red bell pepper
1/2 yellow bell pepper
olive oil (veg. oil is acceptable....olive is better for you)
paprika
1 small onion
garlic

What you do: 

-microwave potatoes for 8 min.
-cook the onion and bell peppers, sliced,with the minced garlic in olive oil on the stove.
-add the paprika,and basil
-slice the potatoes
-add the potatoes to the mix
-cook until the potatoes are browned and the peppers look cooked
(If you put the potatoes on vegan buttered toast, it's SOOOO GOOD!)

I make this recipe on occasion. I enjoy adding more herbs. Basically whatever I am in the mood for.

instead of putting the potatoes in the microwave could i put them in the oven? & how long do you think i should put them in for?

I tried this one out and everyone at home love this recipe. We are potato fanatics and this one is definitely a good substitute for hashbrown. Thanks!

Simple and yummy.

But 8 minutes was way too long to microwave the potatoes.

655 calories for the entire batch, about two servings.

all i have to say is YUMMMMMM! I just made these for tomorrow's lunch, dinner, etc (because I had already eaten). I couldn't stop taking bites!!  ;D I added chilli powder, salt and pepper! Also had asparagus, corn, peas in my fridge so I used those. Are the potatoes suppose to come out in the slices you cut them? Mine just came out mashed together. (but still yummy!) I love the name. how did it come about? anyways, thanks so much! had so much fun making and eating these  ;)

These were alright, good & simple.  i used frozen multicolored peppers, was out of onion, and added morningstar steak strips.  they were a good addition and i topped it with some ketchup.  a good healthy breakfast.

This is a great find. I normally don't season my taters but I've been going through a "try something new" phase and made this today. It was very good. I didn't have any fresh peppers so I used a dehydrated vegitable mix and it was very enjoyable. I also couldn't bring myself to microwave this so I just shredded a potato and cooked it in a skillet. Thanks, I'll be making this again.  ^-^

;)b  I LOVE THIS RECIPE!!!!! Wouldn't change a thing, everything worked like a dream. I cooked it very slowly in low-medium heat and the flavors were very absorbed by the potatoes. I cut the potatoes in to wedges.

Just a question...DO you just toss the potatoes in the microwave? or, do you put then in a polastic bag or a bowl with a little water, or what?  :) I wonder...

yeah i think you just put them in there..like a baked potato in the microwave (:
