Southern Macaroni Salad

What you need: 

4 cups uncooked macaroni noodles
1 cup vegan mayo
1/3 cup sugar
2 tablespoons vinegar (any kind will work)
1/4 cup dijon mustard
2 teaspoons salt and pepper
2 stalks celery, finely diced
1 small-medium sized onion, finely diced
1 carrot, grated

What you do: 

1. Bring the pasta water to a boil and cook the macaroni according to package directions, for about 8 minutes or until al dente. Rinse, drain, and set aside.
2. Whisk the vegan mayo, sugar, vinegar, dijon mustard, salt, and pepper in a large bowl. Add celery and onion bowl.
3. Add carrot, and mix well. Add the drained macaroni and combine. This is best left in the fridge for 24 hours before serving.

SO HOW'D IT GO?

I just prepared this dish to take to a party tonight -- it's delicious!  I think I could eat the dressing by the spoonful.  Yum.

i think this tastes best right after making it... if u let it sit in the fridge for awhile all the dressing absorbs into the pasta... still good though

This is AMAZING!!! This is my new macaroni salad recipe... i think i'm in love... everyone needs to try this! Perfect as is... no need to change anything  :)>>>

I love this southern Macaroni Salad I make it for all of my holiday meals, also potlucks and just because! Luckily I read the note about the mustard but I kinda figured it was missing because I know that when my parents made it when I was young they would put mustard in so I had a feeling something was missing. This is a perfect recipe. Thank you.

I am not sure how to edit the recipe at this point but I forgot a crucial ingredient! You also need 1/4 cup of dijon mustard. Mix it in with the other wet ingredients. Enjoy!
