Southwest Flax Crackers

What you need: 

1/2 cup julienned sundried tomatoes
1/2 cup flax seed
2 cloves garlic, pressed
1 small jalapeño, seeded and minced
1/4 cup fresh cilantro leaves
1 tablespoon olive oil
1/4 cup ground raw sunflower seeds
1 teaspoon sea salt

What you do: 

1) Soak sundried tomatoes for at least 1 hour in just enough water to cover them. Soak flax seed for at least 2 hours in just enough water to keep them from clumping.
2) Put sundried tomatoes and soaking water in a blender pitcher. Add garlic, jalapeño, cilantro, and olive oil to pitcher. Blend until you get a slightly chunky paste. Pour tomato paste into a bowl and stir in flax seed, ground sunflower seed, and sea salt.
3) Spread on teleflex sheets and dehydrate at 105 degrees Fahrenheit for 3 to 4 hours. Using a knife, carefully cut into squares. Continue to dry for and additional 6 hours. Flip crackers and dry until crisp. I generally dehydrate for a total of about 18 hours. You can use more or less jalapeño, depending on your taste.

I made these this weekend and they turned out really good!  I used 2 fresh from the garden romas vs sun dried and used one whole jalapeno (left seeds in).  First time making my own crackers and am really pleased!  Really really yummy.  Nice bite to them.  I think they'd be awesome with spicy cilantro hummus

I don't have a dehydrator yet, so I baked these in the oven.  They didn't get quite crisp enough (they turned out more like pita bread), but they are still flavorful.

I didn't have a jalapeño, so I added a 1/2 of a teaspoon of red curry paste for some spice.  Yum!

can i make this in a low temp oven instead of a dehydrator???


storm this recipe is fabulous...i am not raw in any way, but we had the dehydrator out, and i thought i would give it a try! these are so amazing and i love that they are gluten free!! i can't stop eating them especially with hummus! :D

Only thing I do different even though it makes really no difference

I do not soak anything before hand. Flax seeds seem to work fine using them as is.
Also did not know about soaking dried tomato's. :-\
It more of a patience thing with me


I am taking a raw foods class.  Just ordered my dehydrator.  Can't wait to try this recipe.
