Soy Protein Meatballs

What you need: 

1 cup textured soy protein
1 tablespoon pea flour
1-2 tablespoons bread crumbs
salt, pepper
small onion
1/2 red bell pepper
oil

What you do: 

Pour hot water over soy protein. Let it soak for 5 minutes. Then remove the water and squeeze it with your hands until it becomes sticky.
Add bread crumbs, pea flour, salt and pepper. Chop onion and bell pepper and lightly fry in skillet with some oil. Add to the protein. Mix well.
With wet hands make small meatballs and fry in frying pan until brown on both sides.
These taste good with fried broccoli and fresh tomato.

SO HOW'D IT GO?

This turned into a sloppy-jo type meal rather than meatball because the batter would not stick (I added all in all an extra half cup of bread crumbs) so I just gave up and didn't try to press it into balls but just added it into a tomato sauce and served it on toasted bread. The flavor was amazing! I would not suggest this recipe if you are looking for a meatball recipe but rather a "meat" sandwich. I would make this recipe again and again! Thank you! :)
