Soymilk Oatmeal

What you need: 

1/2 cup rolled oats (not the quick cook)
1 cup soy milk (I use regular, but flavored might be nice)
pinch salt
brown sugar, to taste
1/4 teaspoon cinnamon
allspice, to taste

What you do: 

1. Put oats and soymilk in a small pan along with salt.
2. Bring to boil and then reduce heat and simmer until the soymilk is absorbed.
3. Add sweetener and spices. Turn off heat and let sit a couple minutes until it sets up a bit.
I made this looking to use up some soymilk I have and find that using the soymilk instead of water gives the oatmeal a nice, sweet taste without having to add a ton of sugar.

YUM! I made this and added cinnamon and granola for a nice crunch! DELICIOUS!!!!!!  ;)b

I've been making oats this way for a long time. I love the flavor and creaminess soymilk adds.

ooh, this is so good! I added cinnamon, a splash of maple extract and a spash of agave. I stirred in a handful of raisins, a couple of TBSP ground flax, and a couple TBSP applesauce. I'll definitely be making this again but I think next time I'll omit the agave. Thanks for this recipe!! :smile:
