Soyrizo Mac'n'Cheez-o

What you need: 

1 pound spiral pasta
2 cups water
1/4 cup nutritional yeast
1 tablespoon garlic powder
1 tablespoon onion powder
3 tablespoons flour
1 tablespoon vegan buttery spread
2 cups vegan chorizo (I use soyrizo)
1-2 tablespoons oil
1/2 onion, diced
1 cup corn (frozen works great!)
1 can (14 ounce) diced tomatos in juice

What you do: 

1. Start by boiling a big pot of water to cook all the noodles. While you wait for the water to boil, you can work on the other parts of the recipe. Once the water is boiling, cook pasta until done, about 7-10 minutes depending on type.
2. Meanwhile, make the cheeze sauce. Add water, onion and garlic powders, buttery spread, nutritional yeast, and flour to a blender and mix well. I guess you can do this in a bowl, but I like using my blender.
3. After the sauce is ready, heat a very large skillet. Add oil and onions and cook onions until softened. Add vegan chorizo and stir around until hot. Add tomatoes, corn, and cheeze sauce mix. Stir well and simmer 5 or so minutes until the sauce thickens slightly.
4. At this point the pasta should be done. Drain the pasta and then carefully mix it all into the cheeze mix in the skillet. Heat a little bit longer to let the flavors mix together.
Serve with some salsa, tofu sour cream, or avocado slices. Yum!
I don't add salt to most of my cooking. You might want to try a little and see if you would like some salt in this or other seasonings. The cheeze/tomatoes really help mellow out the soyrizo, so it isn't as spicy as it normally is when it is more "concentrated" in a dish.

oh yes! this was good. my husband loved it too. served it with some salsa, sour cream and avocado slices. it wasnt spicy enough so i added hot sauce on top too. will be making this again asap!

Oh my gosh.  Soyrizo + Mac & Cheese = Heaven!  This was so good!  I used Trader Joe's Soyrizo, which is AWESOME and skipped the tomatoes since I didn't have any.  This was excellent and so easy!  Thanks.  =)

Oh my gosh! I cannot thank you enough for this recipe. My 7 year old is a picky guy and I thought you'd like to know what he had to say about your recipe. "Whoever is the maker of this recipe, that person should be president of the United States!" he exclaims. I thought that his exclamation was too cute. You'd have to know him, but if he was that impressed you really need some sort of prize. Hats off to you and thanks again!  ;)b

This came out awesome. I did have to add a  pinch of salt, but otherwise, nice inexpensive and tasty meal.  I hope my children enjoy it as much as I did. Thanks for the recipe> ;)b

This sounds sooo good. I'm transitioning my children to be as close to vegan as possible. I hope they enjoy this. I'm raw vegan, but I'm looking forward to trying this, sounds super good. I;ll post my family's reaction after we have tried it. Thanks, you always post some rockin recipes.

I'm so glad this is what I made with my soyrizo! It is so yummy. I used veggie shells, sauteed my onion, and just warmed the soyrizo (instead of letting it get browned). I forgot the EB in my sauce, but I don't think I miss it. I added a bit of chunky tomato sauce, and no corn. Garlic salt instead of powder. Mmmm.

Very good stuff.  I was actually browsing around for a breakfast recipe this morning when this one caught my eye.  I knew I had a package of Soyrizo to use up, so I decided to try this for lunch, and I'm glad I did.  I followed the recipe, except that I left out the onion powder as I didn't have any, and I added more nooch because I love it.  It's just a tad too spicy for pasta, even with the cheese sauce mixed in, which is why I gave it 4 stars instead of 5, but I didn't have any sour cream or guac to add in, so that might have damped down the spiciness a bit.  Definitely worth trying if you like Soyrizo or spicy pasta dishes.

;)b  Since by some fluke alignment of stars I actually had all the ingredients and gave it a try.    I did have to add salt for the boyfriend and tumeric for me. I really liked it, fast, easy and filling.
