Soyrizo Mac'n'Cheez-o

What you need: 

1 pound spiral pasta
2 cups water
1/4 cup nutritional yeast
1 tablespoon garlic powder
1 tablespoon onion powder
3 tablespoons flour
1 tablespoon vegan buttery spread
2 cups vegan chorizo (I use soyrizo)
1-2 tablespoons oil
1/2 onion, diced
1 cup corn (frozen works great!)
1 can (14 ounce) diced tomatos in juice

What you do: 

1. Start by boiling a big pot of water to cook all the noodles. While you wait for the water to boil, you can work on the other parts of the recipe. Once the water is boiling, cook pasta until done, about 7-10 minutes depending on type.
2. Meanwhile, make the cheeze sauce. Add water, onion and garlic powders, buttery spread, nutritional yeast, and flour to a blender and mix well. I guess you can do this in a bowl, but I like using my blender.
3. After the sauce is ready, heat a very large skillet. Add oil and onions and cook onions until softened. Add vegan chorizo and stir around until hot. Add tomatoes, corn, and cheeze sauce mix. Stir well and simmer 5 or so minutes until the sauce thickens slightly.
4. At this point the pasta should be done. Drain the pasta and then carefully mix it all into the cheeze mix in the skillet. Heat a little bit longer to let the flavors mix together.
Serve with some salsa, tofu sour cream, or avocado slices. Yum!
I don't add salt to most of my cooking. You might want to try a little and see if you would like some salt in this or other seasonings. The cheeze/tomatoes really help mellow out the soyrizo, so it isn't as spicy as it normally is when it is more "concentrated" in a dish.

SO HOW'D IT GO?

I thought I would give this recipe a try for dinner last night. I did not have corn to add in so instead I put in kale that I had leftover. This was very good. My meat-eating boyfriend ate more than I did. I plan to make this again in the near future.

Great recipe!!  It's spicy for sure, but a little Tofutti sour cream cools it down a little bit.  It definitely makes a huge amount, so I'll be eating this for lunch for a few days, which is fine with me!  When I fixed mixed the cheese sauce I was worried it was too thin and watery, but it worked out quite well once it was heated and mixed with the other ingredients.  Good stuff!

It is recipes like this that make me wonder why I didn't go vegan ealier in life! It's just perfect as is, but I did add a can of pinto beans (rinsed and drained) and some chopped cilantro. I love the addition of these 2 ingredients. Beautiful recipe! 8)

This recipe is delicious!  I didn't have diced tomato or corn so I left those out and it was still very good.  I added a bit of salt, pepper, and turmeric as suggested before.  This dish is very satisfying and I'm looking forward to the leftovers!

:D YUMMM!!!!! I didn't have very much Earth Balance Margarine so I just used what I had left. I used garlic salt instead of garlic powder and no onion, corn, or onion powder. I was pretty lazy, but this is still amazing!!! NOM NOM NOM!

I didn't have a lot of the ingredients but subbed spaghetti sauce instead of canned tomatoes, garlic salt instead of garlic powder, chives instead of onion powder, and used about a cup of nutritional yeast.  Also, my pasta supply was running a little low so I used some linguine instead of fun shapes.  It is really good though I will probably add a little catsup next time.  I think that might be the flavor it is missing.

this was super delicious even though i did not have any corn or the tomatoes. I was skeptical at first to eat mac and cheese with salsa and vegan sour cream but it was quite delicious, even my partner though it was delicious  after saying "this looks like vomit", he even ate it with the sour cream and salsa. i would recommend this to anyone, also i love a chance to use soyrizo.

I have a nutritional yeast intolerance it usually smells awful and taste (though not as bad) not good. This was not bad. If your like me and cant stomach the stuff use a bit more garlic than they reccomend. It actually wasnt half bad. It was more like Mexican Cheezburger Helper than Mac and Cheese.
