Spaghetti with Spring Onion and Zucchini

What you need: 

200 g spaghetti, broken in half (about a small handful, or eyeball how much pasta you'd
like)
1 1/2 teaspoons olive oil
1/2 zucchini, chopped
2 spring onions, chopped or diced
1 clove garlic

What you do: 

Boil water and cook the spaghetti.
After about 10 minutes of cooking, heat the olive oil in a pan and toss in the zucchini and spring onion. Cook on medium-high heat.
Once the spaghetti is done, drain and mix with the veggies. Add salt and/or pepper to taste.
Delicious and quick for two people, when this is what you have in the house!

SO HOW'D IT GO?

My family totally dug this recipe! Super quick and easy toss together dish... and a fabulous way to use up the abundance of squash we have from the garden on any given day LOL. This will continue to be a great staple meal through the summer for us. Thanks!! BTW, I didn't actually measure and I probably tripled the recipe due to my big fam and used a TON of garlic. The spring onions in this were super yummy.

This wasn't bad at all, though I will admit I'm more used to pasta with the traditional tomato/creamy sauces.  I added an extra clove of garlic and got only a single serving, which I ate all in one go.  ;D In defense of the recipe though, I didn't measure the pasta and just added what I thought looked like a good amount, so I may have had a larger veggie to pasta ratio than intended.  Or I could just be a piggy. :o  Regardless, I will probably make this again when I have extra spring onions I need to use up.

I just made this for dinner and it's really good! I used some regular onion instead of spring onions.  :)
