Spaghetti Squash Salad

What you need: 

1 spaghetti squash, halved and deseeded
2 large vine ripened tomatoes, coarsely chopped
2 bunches green onions, chopped
2 medium carrots, grated
2 cups fresh bean sprouts
2-4 cloves garlic, minced
2 cups frozen peas
1 teaspoon tarragon (or basil, marjoram, oregano)
rice vinegar, to taste

What you do: 

1. Microwave squash halves in 1 cup water for 20-30 minutes, covered.
2. Separate squash strands with a fork.
3. Toss all ingredients together, and chill.'
