Speckled Butter Beans

What you need: 

1 bag of frozen speckled butter beans
1/4 teaspoon red pepper flakes
3 cups veggie broth or water
1 small white onion (diced)
1 teaspoon minced garlic
1 small bay leaf
Mrs. Dash season blend (whatever you prefer)
1 tablespoon olive oil

What you do: 

This is a southern thing, so if you can't find butter beans, use regular lima beans.
Heat a saucepan over medium heat and pour in the oil. Add onions, garlic and bay leaf. Let this cook briefly but don't let the onions get brown. Add the broth/water. Bring the broth/water to a boil. Add the season blend and pepper flakes. Let this boil for about 1 minute. Next, add the beans, cover the pot and turn the heat down to medium low. Let the beans cook 30-40 minutes or until tender. These are great with mustard/turnip/collard greens and corn fritters! YUUMMMMMY!!
