Speedy Garlic Sauce for Pasta
2 tablespoons olive oil
1 clove garlic, minced finely
1/2 teaspoon parsley
1/4 teaspoon red pepper flake
salt and pepper, to taste
1/4 cup reserved pasta water
vegan parmesan, to taste
1. Heat oil in a shallow sauté pan, add remaining ingredients excluding water, and sauté on low until the garlic is tender but not browned.
2. Prepare the pasta according to package directions, and add to the pan with reserved liquid, salt and pepper.
3. Toss over medium heat until thickened. Sprinkle with vegan parmesan, if desired.
This recipe can be increased by the number of people eating. I make this when there's nothing else in the house, its quick simple and delish! My boyfriend begs me to make it every time he visits! Great for unexpected dinner guests.'
SO HOW'D IT GO?
Yes, this recipe is speedy! I liked it, crushed red pepper and garlic are two of my favorite things. It was a easy to throw together-- and I had everything on hand. I added a little bit of soy creamer to the mix, next time I'll add EB.
I use half a box or so? It just depends on how much sauce you want, each to their own. I just realized this says ONE garlic clove. I usualy use about 7? haha.
I cant believe i havent reviewed this yet, i've made it so many times! This is a basic, yummy, quick, get in my belly recipe. I consider it the jump off point, to just add whatever you want hah. I made it with earth balance tonight, yummy, and this is the first time i actually read the recipe enough to notice it says red pepper ;D. Very good though!
Mmmm well i added onion and tomato and didn't use red pepper. Turned out like more of a simple veggie soup, but that's ok. I luv hot soup and am happy to have found this new creation :)
Ok just made this, and it turned out awesome! I used about 5 cloves of garlic and a palm ful of red pepper flakes. I also used just a smide of EB to make it a bit more creamy. I also tossed in some fresh asparagus for some crunchiness.....smells amazing in my little apt. right now!

Not bad ... I changed this a lot though. I used margarine instead of the oil but did add oil eventually. I used garlic powder since I didn't have any fresh garlic, Italian seasoning and about 2 tablespoons chopped onion, and some mushrooms that I needed to use. When I added water, it didn't thicken up very good (I used udon noodles) put I added it anyway and thickened it up by adding a ton of vegan parmesian cheese. It turned out pretty good. Thanks!
This was perfect when I had no food in the house and didn't feel like cooking anyway...I doubled the sauce and threw in some EB, NY and extra garlic. Delish!
I can attest for the absolute yumminess of this recipe :) We lived on this stuff when we were first married...it was easy on the budget plus I didn't know how to cook much else! Italians call it spaghetti ajo-ojo pepperoncino or aglio e olio pepperoncino and if you leave out the red pepper it is called aglio e olio- helpful if you want to order it in a Italian restaurant, although they probably use parmesan cheese and butter with the oil - never mind :-\.
