Spiced Brown Rice with Apple, Raisin, Cashew, Tomato, and Leek

What you need: 

1 1/2 cups brown rice
1 1/2 veggie boullion cubes
3 cups water
1 red apple, chopped small
1/2 cup golden raisins
1 entire stalk of leek (chopped/sliced finely...like onion)
1 tomato (whichever kind you like), chopped small
2 cloves garlic, minced
1-2 teaspoons garlic powder
2 teaspoons salt
1 teaspoon pepper
1/2 cup chopped raw cashew
2 teaspoons cinnamon (or less if you don't like it)
olive oil

What you do: 

1. Sauté brown rice with olive oil, chopped cashews, minced garlic, and chopped leek for 5 minutes, or until rice is more golden and toasted in deep pan.
2. With heat still on, add 3 cups water, veggie cubes, chopped apple, raisins, tomato, cinnamon, salt, pepper, and garlic.
3. Let it come to a boil.
4. Once water has come to a boil, cover and lower heat to low medium. It will probably take 30-45 minutes for water to be absorbed, so make sure you check every few minutes.
5. Enjoy this flavorful rice!
-I made up this recipe on my own, so feel free to change up the ingredients and/or the quantities of ingredients that I use. I sometimes add extra vegetables while the water is boiling, such as mushrooms or green beans. Be creative!
