Spiced Peach Muffins

What you need: 

1 1/2 cups flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon cloves
1 teaspoon vanilla
1/2 cup nondairy milk
1/2 cup vegetable oil
1 (15 ounce) can peaches or 1 cup fresh peaches, diced

What you do: 

1. Preheat oven to 350 degrees F. Spray or line a cupcake pan (there should be enough batter to fill 10 spaces 3/4 full). Mix all dry ingredients.
2. Add wet ingredients and stir well. Do not mix too hard. Dough should be light and airy. Add peaches last (apples would taste good, too). Bake for 25 minutes.
Source of recipe: I made a non vegan one for my boyfriend out of a Southern cookbook and modified it for me!

SO HOW'D IT GO?

My son and I made these together today and they came out fantastic! We left out the cinnamon and cloves due to his allergies and added just a bit of blueberries along with fresh peaches. The extra fruit increased the bake time but no biggie. We used So Delicious Coconut milk for the nondairy milk. Very yummy and loved by both my kids.
