Spicy and Sweet Dinner Salad

What you need: 

1/2 cup sliced almonds
3 spicy vegan chicken patties (I use boca patties)
3 cups mixed baby greens
2 cups romaine, torn
2 cups strawberries, sliced
1 cucumber, peeled, and sliced
1/2 cups vegan feta (check out some of the awesome recipes on VegWeb!)

What you do: 

1. Preheat the oven to 350 degrees F. Sprinkle almonds on cookie sheet and bake for 5 minutes, or until toasted. Take them out and put aside then turn the oven up to 400 degrees F.
2. Put patties on the cookie sheet and bake for 15 minutes. Flip them once in the middle of the cook time.
3. When the patties are done, chop them into bite size pieces and put everything in a serving bowl. Toss well.
4. Serve with your favorite dressing (balsamic vinaigrette goes perfectly with the strawberries) and some garlic bread.
