Spicy Butternut Squash Salad

What you need: 

1 medium butternut squash
1 large onion, chopped
2 limes, juiced
2 tablespoons seasoned rice vinegar
4 tablespoons virgin olive oil
1/2 cup cilantro, chopped
1 medium bell pepper
1 medium yellow pepper
cayenne, to taste
salt and pepper, to taste

What you do: 

1. Cut squash in four or six pieces and remove seeds. Steam squash for about 20 minutes or until the squash is cooked, but firm; do not overcook.
2. Cut away the peel and cut squash in 1/2" cubes. Let squash cool some.
3. Add all the rest of the ingredients. It is great with adzuki beans on the side.

SO HOW'D IT GO?

I made this with 2 tablespoons of sesame oil instead of 4 tablespoons of olive oil and lemon instead of lime and it was great. I also cooked the onion, pepper, and cilantro for a few minutes before mixing it in with the squash and dressing and this really brought out the flavors.

Wow, this sounds good and interesting. I have local butternut squashes and wanted to do something different than the usual butternut squash soup/roasted sqaush, etc. I'll have to try this soon! Thanks for sharing.
