Spicy "Chicken" Patty Sandwich

What you need: 

1 breaded faux "chicken" patty
1 small tomato, sliced
lettuce (as much as you like)
1 Tablespoon vegan mayonnaise
cayenne (red) pepper (to taste, I use about 1/2 - 1 teaspoon for a spicy kick)
1 small pinch chili powder
1 hamburger bun or Kaiser roll

What you do: 

1. Cook your "chicken" patty according to the directions on the label (they'll vary from product to product), preferably by cooking in a toaster oven or conventional oven, for maximum crispness.
2. Measure out a tablespoon of vegan mayonnaise (or feel free to adjust to taste). Mix in a small pinch of chili powder and the cayenne pepper to taste. Start small and work your way up, stirring and taste testing your mayo after every addition until you get to the right level of spiciness. The tomato and lettuce tone down the spiciness, so you might want to make it a bit spicier than you'd normally like. It's up to you.
3. Once your "chicken" patty is ready, put it on your bun and spread it with your spicy mayonnaise, then top with tomato and lettuce (as much as you like).
4. Enjoy!
