Spicy Chickpea Snack
What you need:
2-4 tablespoons cooking oil
1 tablespoon Cajun spice
1 tablespoon chili powder
1 teaspoon salt and pepper
1 (15 ounce) can chickpeas, drained and rinsed
What you do:
1. Preheat oven to 400 degrees F. Pour oil into baking pan, add spices, mix well.
2. Add chickpeas and mix until well coated.
3. Place in oven for 15-20 minutes, or until crunchy. Stir once half way. Enjoy cold or hot.
I like to eat these instead of chips or other junk while I watch a movie.

SO HOW'D IT GO?
I forgot to say that I added some dried parsley for color and cooked them for longer than the recipe stated. I actually ended up broiling them because I got impatient.
I also used less oil because I didn't see that it was necessary. It was definitely different, like heavy popcorn. But I like them.
these were really good. i only used 1 tbsp olive oil (which seemed like enough), and an italian spice blend instead of the others since im not a huge fan of hot & spicy stuff. they definitely need to bake for at least 40 minutes to get even a little crispy it seems though. i ate them all from the pan while they were still toasty warm.

Man, oh man! These things are so good! I didn't realize that chickpeas got crispy and crunchy. That is really great. I think I cooked mine for longer than 20min though. I put them in the toaster oven and I kind of forgot about them for a while. I probably cooked them for more like 45min. They came out really crunchy!
