Spicy Chickpea Snack

What you need: 

2-4 tablespoons cooking oil
1 tablespoon Cajun spice
1 tablespoon chili powder
1 teaspoon salt and pepper
1 (15 ounce) can chickpeas, drained and rinsed

What you do: 

1. Preheat oven to 400 degrees F. Pour oil into baking pan, add spices, mix well.
2. Add chickpeas and mix until well coated.
3. Place in oven for 15-20 minutes, or until crunchy. Stir once half way. Enjoy cold or hot.
I like to eat these instead of chips or other junk while I watch a movie.

SO HOW'D IT GO?

I dunno if it was my gas stove or w/e, but i had to cook these for almost 2 hours. i love em though. better than chips and popcorn.

wow! i wasn't expecting this kind of response to this very humble little snack, but none-the-less, i'm glad every one seems to be enjoying them as much as i do! i do have to say though....... i did say ya'll should put way too much salt and pepper... and i actaully bake them at 450 now for about 35 - 40 minutes now my self.

I had to cook these for an hour and 20min, mixing every 20 min, for they became crunchy. They didn't have much of a flavor  :-[ but I think it might have been my spices and not the recipe. Overall they had a nice crunch and we not too bad.

I just made these tonight w/1 TB sunflower/garlic oil, 1 tsp chili powder, 1 tsp pepper, 1 tsp Mrs. Dash, and a sprinkling of seasoned salt. It was really good! I baked it for about 45 minutes @ 420 degrees, and they came out slightly crispy, and had the consistency of steak fries. Right when I was all excited about them, I had my husband taste them, knowing he would approve. He just said, "too salty". There went my ego:( He's good at that.

These are divine.  I didn't have any cajun spice, so I used chili powder and garlic.  I kinda salted them to taste, not sure how much I used but these were good.  I think they cooked about a half hour? I used a big pan, and spread them out pretty good.... not sure if that may have helped them get crunchy or not.

The only problem, I actually had a few pop, like popcorn, and fly off the pan onto the floor of the stove, setting off my smoke alarm. Heheheh.  Have yet to test them out on my guinea pig, er, boyfriend but I am sure he'll love them also.

This was a great idea! I  don't really like the texture of chickpeas, but this solves that issue and makes a yummy snack. I also didn't get them quite as crunchy as I would have liked but they were still good. I put them on top of a salad that I made sorta like croutons!

This was amazing! My whole family loved it, and its so so much better to eat during a movie than artificial-tasting popcorn.

;)b  Very good recipe!  I changed it up a bit, though - I used one tsp each creole seasoning, cumin, chili powder, and Old Bay seasoning.  Added 2 TBL oil, and baked for 45 minutes (still very soft at 20 minutes, so I added time and kept checking every 5 minutes or so).  Came out perfectly crispy and VERY tasty!!  I am a salt lover, but I did omit the salt as there was some in the creole seasoning and the Old Bay.  Didn't need ANY more salt, so I would suggest omitting it and tasting as they come out of the oven.  You can always sprinkle some finely ground sea or Kosher salt on them while still warm......I've found a new fave!!!

I ended up having to rinse them and start over because I used too much oil and I didn't like the flavor of all of the pepper.
I started over with some less pepper, less oil, and more spices and coated them.
It turned out better the 2nd time.
I also put them in at 450 degrees instead of 400 because everyone who posted before I did basically says it takes too long to cook at that temp.
Every few minutes you have to shake it up so it doesn't burn on just one side.
But all in all good.
Are they supposed to be fully crunchy or just soft on the inside?
