1 teaspoon olive oil
1 clove garlic, minced
1 shallot, chopped
1 eggplant, sliced
1 red chili, sliced
1 yellow pepper, chopped
1 tablespoon vegetable stock
salt and pepper, to taste
1, Heat oil in pan, throw in the shallots and garlic until soft. Throw in the eggplant and red chilli.
2. Stir fry for a couple seconds, then throw in the yellow pepper. Let the ingredients mix well, then add vegetable stock.
3. Let the ingredients absorb the stock, and then add whatever salt, pepper, and sugar.
4. Stir ingredients until the eggplant is almost falling apart. Serve with rice.
