SO HOW'D IT GO?

This is one of my family's favorite recipes. It's actually relatively simple to make - it's just time-consuming to prepare the vegetables. I created this recipe out of things I had in my fridge when I was given 5 eggplants from someone's garden. It's a very delicious, savory recipe, and it's very satisfying. My family say that it has a rich "beefy" taste. The leftovers taste great hot or cold. Enjoy! :)
