Spicy Lentil Dip/Salad

What you need: 

1 pound dry lentils
1/2 cup finely sliced carrots
1/2 cup chopped tomatoes
1 packet of dry vegan ranch dip mix
1/8 cup soy sauce (or to taste)
1/8 cup lemon juice (to taste)
1 1/2 Tablespoons cumin
Black pepper
Cayenne pepper
Salt
Optional additions: finely chopped green onions and/or

What you do: 

Cook lentils until very soft. I use a pressure cooker for 45 minutes. While hot, pour lentils into a mixing bowl and add salt, lemon juice, soy sauce, cumin, cayenne pepper (to taste or optional), black pepper and 1 package of Ranch Mix Party Dip. Depending on taste, sometimes I add another 1/2 package. The lentils can absorb a great deal of the seasonings. Mix together with carrots and tomatoes and refrigerate. My husband takes this for lunch almost every day and eats it with vegan crackers. It is a PERSONAL SENSE OF TASTE, so please adapt as you choose to your own tastebuds.
