Spicy Southwest Salad
1 large tomato, chopped
1 avocado, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 small red onion, chopped
1 bunch scallions, chopped
1 (15-ounce) can garbanzo beans, rinsed and drained
1 (15-ounce) can kidney beans, rinsed and drained
1 (15-ounce) can lima beans, rinsed and drained
1 fresh jalapeno, seeded and finely minced
1 fresh lime, juice of
1/2 fresh lemon, juice of
salt, to taste
pepper, to taste
cilantro, for garnish (optional)
1. In a bowl, mix together tomato, avocado, red bell pepper, yellow bell pepper, onion, and scallions.
2. Mix in the garbanzo beans, kidney beans, and lima beans.
3. Carefully stir in jalapeno, lime juice, and lemon juice, as to avoid smashing the beans and avocado.
4. Season with salt and pepper. Garnish with cilantro. Enjoy!
