Spicy Squash

What you need: 

1 tablespoon oil
1/2 teaspoon turmeric
1 teaspoon ground coriander
1/4 teaspoon asafoetida*
salt, to taste
1 small squash or zucchini, cubed
1/4 a small cabbage, chopped
1 carrot, cubed
1/2 onion, sliced or chopped
1 tablespoon dill, chopped

What you do: 

1. Heat oil in a skillet. Add the spices and fry for 10 seconds.
2. Add the veggies and fry until done. I like the steam my veggies in microwave for 4 minutes on high before frying so that they do not loose color and are done faster.
3. You can add some water and saute them with a lid on for about 5 minutes. Sprinkle chopped dill when done.
*Asafoetida is an Indian spice in bright yellow colour and very off-putting smell. But when you fry it in oil for a while, it develops a nice oinion/garlic smell and taste.

This is very different, and good! I used 1 yellow squash, some cabbage, no carrot, green onions, and 1 clove garlic. I didn't have the a-spice. I also added a couple tbs coconut milk b/c I wanted some liquid, and used dried dill for the top.  ;)b

Is there a substitute for asafoetida? I've never heard of it or seen it in any store.

you should look for it in any indian store. if you can't find it, nevermind, just use chopped onion and garlic.  ;)
