Spinach and Artichoke Dip

What you need: 

4 tablespoons olive oil
1 red bell pepper, chopped
5 cloves garlic, minced
1/4 cup nondairy milk (I use soy)
1 (15 ounce) can artichoke hearts, chopped
1 (8 ounce) package vegan cream cheese (I like Tofutti)
1 cup green onion, chopped
1/4 cup chives, chopped
4 tablespoons vegan mayonnaise (I use Veganaise)
1/3 cup nutritional yeast
1/4 cup vegan parmesan
1/2 block (about 5 ounces) vegan cheddar (I use Follow your heart), divided
1 (10 ounce) package chopped frozen spinach, thawed
salt and pepper, to taste
1 tomato, chopped

What you do: 

1. Preheat oven to 350 degrees F. Heat oil in skillet, add peppers and garlic, saute 4 minutes over medium heat. Add milk, and heat for 1 minute.
2. Add artichokes, heat 2 minutes. Add cream cheese, green onions and chives, and heat through until melted. Add parmesan, nutritional yeast, 1/2 the vegan cheddar and vegan mayonnaise.
3. Let heat until completely melted, and then add spinach. Stir and let heat for 3 minutes. Season, to taste. Pour into oven safe dish, top with the rest of the vegan cheese and bake for 10 minutes.
4. Remove from oven and top with chopped tomato. Serve hot with tortilla chips or small slices of garlic toast.

SO HOW'D IT GO?

I made two large batches of this for a potluck.  It was totally devoured and very well liked.  I thought it was delicious.  Just a couple of caveats.  It's very very high fat, virtually no protein and also expensive to make. That doesn't make it bad necessarily just something to be aware of.  Although I liked this and will have it as a standby potluck dish when needed, I want to try other artichoke dips that are tofu or bean based (more protein) and don't require store bought vegen cream cheese or even storebought vegan cheddar. Still a great recipe, though and I am glad I made it.

ps I use daiya cheddar and don't put the tomatoes in

love this. Made it several times and made it today for my parents' non vegan super bowl guests so they will eat it and then "surprise!" it's delicious, and vegan!

Me and my significant other have made this a couple times now for different occasions and it has always been a HIT. It is absolutely the "life of the party" for vegans and non-vegans. I omitted the bell peppers and tomatoes and added a couple scoops of tofutti sour cream each time. Tastes delicious!!

I enjoyed this recipe. I used vegan mozz instead of cheddar. I thought it was missing something, so I added a little bit of mustard and hot sauce. I also substituted plain nutritional yeast instead of vegan parmesan. I added 2 chopped tomatoes BEFORE putting in oven.

We are digging into this right now and really love it! I have been meaning to make my own recipe but this tastes exactly like I wanted it to taste! Nice recipe!

l've long been a fan of spinach artichoke dips. This was good, it just didn't quite replicate the flavors I remember like I was hoping. I pretty much followed it to the tee since it was so highly reviewed. The only thing I did differently, which I wouldn't recommend, is added all my cheddar cheese to the mix rather than adding some to the top. I think I'll tinker with the recipe next time. Maybe use daiya mozz for the cheese, and perhaps add more parm or nooch... I think adding roasted red pepper instead of the fresh bell pepper would be nice and some additional spices. I'll be sure to post it on vegweb when I get it to my liking.

p.s. Drain the heck out of that spinach before adding it to the pan!

This recipe was flawless. I wasn't sure how much spinach to use but I ended up using a whole bag (forgot how big it was, but I was between one of those little boxes of frozen spinach and the bag). I also skipped the tomatoes and my stupid supermarket didn't have green onions so I just sauteed some yellow onion with the garlic before adding the chopped pepper. I also didn't feel like baking it and it was still delicious. I think squeezing as much excess water out of the spinach and artichokes made a difference. Anyhow, the result was amazing and it made enough for a small party. Good thing I bought the "fiesta size" bag of blue corn tortilla chips!

This is the BEST spinach dip recipe I have tried.  All my non-vegan and cheese loving friends gobbled it up!

:D This was PHENOMENAL!! I used tofutti cheddar cheese slices rather than the follow your heart because I think it melts better.  Other than that though I followed it to the T and it was definitely the best spinach artichoke dip I've ever made vegan or not.  I served it with tortilla chips and it reminded me very much of the spinach artichoke dip I used to love at Applebee's in the pre-vegan days.  My friends loved it! Thank you so much for this recipe it's definitely going to be made many times over in the future!
