Spinach and Bean Quesadillas

What you need: 

1 (10 ounce) box frozen chopped spinach, defrosted
1 (15 ounce) can fava beans
garlic, to taste
cumin, to taste
chili powder, to taste
salt and pepper, to taste
oil or cooking spray, as needed
1/2 cup diced roasted red peppers
1/4 cup salsa
2 cups shredded vegan cheese, divided
tortillas, to serve

What you do: 

1. Using blender, add spinach and half the beans with some of their liquid. Pulse until smooth, then add rest of beans.
2. Add in the garlic, cumin, chili powder, and salt and pepper all according to your taste. Pulse in blender briefly. Meanwhile, heat frying pan on medium high with your choice of oil.
3. Pour blender mixture into bowl and add peppers, salsa, and one cup of vegan cheese. Mix well. (you can even make this the night before if you like.)
4. Spread some mixture on 1/2 tortilla, and sprinkle extra cheese on top of mixture. Fold tortilla in half and cook a few minutes on each side until golden brown and piping hot. yum!'

SO HOW'D IT GO?

I just became a Vegan and this is my first meal I made and let's just say if I can eat like this everyday, I won't ever miss meat!

I made these about a week ago and let me say AMAZING! I did use Fava beans and i was not disppointed! I also used 3/4 a lb of fresh spinach, fresh garlic, I had fresh marinaded roasted pepperson hand so I used those, about 1 Tbs of all three seasonings and used nutriental yeast. Wow, they yeilded enough for 4 lunchs for my boyfriend and I! Yum!

I, like countless other people, used black beans as well (and this was the first time I ever used black beans). I opted out the cheese, being I didn't have any vegan cheese, and it came out very well! I'll for sure be making this once in a while.

I also used black beans, and these were great.

On a side note - The only time I ever tried to use fava beans they smelled sort of sour as soon as I opened the can.  I thought maybe that's how they are supposed to smell, but it didn't go away with cooking so I tossed them, thinking they must be bad.  Can anyone tell me what they're supposed to taste/smell like?

So I basically live off of quesadillas and this is pretty much exactly how I make mine! Except with black beans, tomatos instead of peppers, and Frank's Red Hot sauce instead of spices ... ok, so pretty different but still! Great minds think alike, cheers!

This was so good, my husband loved it!! I did a little modifying, I used fresh spinach and sun-dried tomatoes instead of the roasted red pepper.  And used dried  black beans (that I cooked) instead of the can but I did add some water. This will be going into our meal rotation. Thanks!!

I used black beans too... and this recipe is amazing!! One of my fav's now

I really liked it and it's easy to make.... I used black beans (and an alternative version with chick peas which are my FAVA beans!  :-D)

Be careful with toasting the Tortilla though...  I personally don't like it too crunchy! ...and don't be too tight on the cheese... you only live once!
