Spinach Dip Sandwich

What you need: 

1 cup frozen spinach
1 tablespoon hummus
salt and pepper, to taste
few shakes vegan Parmesan cheese
2 slices sprouted grain bread
vegan margarine, as desired

What you do: 

1. Cook spinach for 2 minutes in microwave. Drain. Mix in hummus, and season.
2. Add in a few shakes of Parmesan style cheese.
3. Toast sprouted grain bread and spread on a little margarine. Scoop spinach mixture on toast and eat.
Source of recipe: I wrote this recipe for something easy to make to take to work that combines some of my favorite foods and got me away from eating premade veggie burgers. This is a good "IBS" sandwich for those who are familiar with the disorder. This sandwich is best made the night before so it sticks together nicely. Enjoy!

SO HOW'D IT GO?

this is super good! i added some vegan shredded mozz instead of the parm, and added sliced tomatoes, sweet onion, and some imitation bacon bits for some crunch.  it turned out amazingly welll! so quick and so easy, ill def be making this again.  yummmmmm!

I didn't cook the spinach, I just used raw spinach, hummus, radishes, some butter and parm cheese and it was really good :)

very tasty and fast!
I used fresh spianch, put it in the microwave about 45 sec. added a little garlic powder and mustard. soooo easy and yummy, definatly making it again! :)>>>

I didn't even like spinach dip when I wasn't a vegan, so I went into this experiment hesitantly.  It was really good, though!  I used more hummus just because I wanted to use the carton I had purchased.  The spinach goes really well with the hummus...doesn't overpower it the way that it does with the non-vegan version.  I didn't use the margarine...didn't really need it.

Yummm!  I'm eating this right now - it is soo good.  I used 2 cups fresh spinach, wilted down in the microwave for 2 minutes, homemade hummus and added a bit of vegan mayo and some mustard along with the parmesan.  Thanks for the recipe :)
