2 cloves garlic finely chopped / crushed
1 medium onion
14 oz can chopped tomatoes
frozen spinach – 14 oz can’s worth
2 tablespoons tomato puree
2 teaspoons of required herbs
salt and pepper to taste
oil for frying
Fry the onion and garlic until soft.
Add the tinned tomatoes (keep hold of the can), puree, herbs, salt and pepper and stir. Leave on the heat until bubbling.
Once hot and bubbling use the tin from the tomatoes to measure the required amount of spinach (then add a couple more lumps) and add to the pan and mix it up.
Leave on heat for about 20 minutes – stirring regularly to ensure spinach is mixed in thoroughly.
Goes well with pasta or rice.
Freezes well – the amount here is for approx. 4 people depending on how hungry you are.
