Spinach Tomato and Brown Rice Soup

What you need: 

1 small onion, chopped
1 green bell pepper, chopped
8 ounces fresh spinach, or several handfuls
1 (14.5 ounces) can of diced tomatoes
1 (14.5 ounces) can of water
1 tablespoon Worcestershire sauce
1 cube vegan vegetable bouillon
1/2 cup short grain brown rice
salt, to taste
pepper, to taste

What you do: 

1. Saute onion and bell pepper in a large sauce pan until tender.
2. Add spinach and continue to saute until spinach is wilted.
3. Add undrained tomatoes, water, Worcestershire sauce, and bouillon. Bring to a boil.
4. Add rice, cover and simmer until rice is tender..about 30 minutes. Season with salt and pepper. Enjoy!
