Split Pea and Barley Soup

What you need: 

1 cup green split peas
1/2 cup pearl barley
1 L veggie stock
1/4 cup dry chopped onion
1 teaspoon garlic powder
2 teaspoons spicy mustard (prepared)
2 teaspoons balsamic vinegar
dash soy sauce
ground pepper (to taste)
1 carrot

What you do: 

Shred the carrot. Combine everything in a medium sized stock pot and bring to a boil.
Turn the heat down and let simmer approximately 1 hour, or until the peas fall apart and the barley is tender.
While it simmers, keep an eye on it and add more stock if it starts to look dry.
This recipe is very hit or miss. I tend to invent as I cook most of the time and this soup turned out very well. The peas and barley are very tasty together! You can replace the dry onion and garlic with fresh substitutes, I just didn't have them on hand.

SO HOW'D IT GO?

Delicious!  I only had half a cup of split peas left so I also added half a cup of red lentils.  I really liked this as it added more variety to it and had a nice texture!  I also used zucchini instead of carrot (again, I didn't have carrots) and it was really nice.

Just made this for dinner...I was about to say it needed salt, then I realized I forgot the soy sauce  ;D

Perfect combo of flavors and my favorite was that it was a "set it and forget it" kind of meal.

Can someone please tell me, what is 1 L veggie stock?

1 Liter of Vegetable Stock = 4.22675282 cups
so about 4 1/4 cups  :)

Mm, this is an impressive recipe!  I'm making this right now; it smells sooo delicious!  I followed the recipe exactly except that I put in one clove of chopped garlic instead of dry and 1/4 cup chopped onions instead of dry.  It's thickening nicely and even at this stage tastes great.  Thanks for a great, easy recipe, baypuppy.  :)
