Split Pea Soup

What you need: 

2 cups dried split peas
2 quarts water
1 large or 2 medium onions, diced
2 carrots, sliced
3-4 ribs celery, sliced
1 (8 ounce) package vegan Canadian bacon style slices (I use Yves Canadian Bacon), chopped (optional)
1-2 tablespoons vegan powdered broth (I like the vegan chicken flavor)
salt and pepper, to taste

What you do: 

1. Put ingredients in a crockpot. Add more water as necessary for the consistency you like.
2. Cook on high to get it hot, if you have time, then lower to low or medium low. Don't fill the pot too full; this can foam up.
3. Then stir, adjust seasonings and serve. If you like it smooth, take out 1/4-1/2 of the soup and blend, add back, and stir.
All this needs is some good vegan bread, or even corn bread and supper is ready!'

SO HOW'D IT GO?

I'm not a huge fan of using the fake meats, so I leave them out. However, in split pea soup, sometimes that smoky flavor really does the trick. I use Liquid Smoke (about a half teaspoon or so--a little goes a long way) to get that "meaty" flavor. My omni mom couldn't tell at all. It's cheaper too! A bottle costs about a dollar, and will probably last a year or more. I also like to add a couple of cubed potatoes--they really add body to the soup! Yummy!

St Yves vegetarian slices, Canadian Bacon style does that come in the same amount in package as morning star? I think thats alot of bacon for a recipe.

Yes, this was an easy and delicious soup. I did however make some changes. I used one can of veg. stock as part of the 2 quarts water. I also added 3 minced garlic cloves, about a teaspoon of curry powder, some cayenne and a dash of cumin. Also added a splash of soy sauce. Pureed half of mixture and simmered.

I made this recipe without the celery - not a huge fan of celery and it was absolutely delicious. I used onion soup mix as well as vegetable broth for the base & did a big batch.  It tends to dry out in the fridge a little but that is perfect - all you do is add boiling water for an instant soup!

Awesome recipe. It took me 15 minutes to get it all in the pot and cooking.  I left out the onions (My boyfriend hates them, but eats all my other crazy veg cooking without complaint). I didn't have veg stock, so I used vegetable bullion cubes instead. I added a few small potatoes, cooked it on the stove and blended half.  Honest, this stuff is just as good as my mom's ham saturated version, but in a fraction of the time and cruelty free. I love it.
