Squash Goulash

What you need: 

1/4 cup onion, chopped
1/4 cup medium grain rice
1/2 teaspoon coriander
1/2 teaspoon paprika
1/4 teaspoon turmeric
1/4 teaspoon cayenne pepper
dash cardamom
olive oil, as needed
1 3/4 cups water, divided
1 tablespoon tomato paste
1 small clove garlic, minced
1 bay leaf
1/2 acorn squash, halved and deseeded
1 small red potato, chopped
1 small carrot, chopped

What you do: 

1. Saute onion, rice, and all spices except garlic and bay leaf in a small amount of oil until rice sizzles.
2. Add 1 cup water, tomato paste, bay leaf and garlic. Simmer for 15 minutes.
3. Add vegetables to rice mixture along with an additional 3/4 cup water. Simmer over low heat for about 10 minutes, or until vegetables are soft.
