"Steak" and Stout Pie
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 cups cremini mushrooms, sliced
1 pound seitan chunks
1/4 cup flour + 2 tablespoons flour, divided
salt and pepper
1-1/2 cups potatoes, diced
1/2 cup carrots, chopped
thyme and rosemary
1 tablespoon vegan worcestershire sauce
1 (12-ounce) bottle Stout beer
2 pie shells
1 cup vegetable broth
nondairy milk
1. Heat olive oil in 2-quart saucepan. Add onion and cook until almost translucent. Add garlic and mushrooms. Dust seitan with 1/4 cup flour and add to pan. Season with salt and pepper and cook for 5 minutes. Add potatoes, carrots, thyme, rosemary, worcestershire sauce, and beer. Cover, lower heat, and simmer for 15 minutes.
2. Preheat oven to 400 degrees Fahrenheit. Bake one pie crust for 10 minutes. Remove from oven.
3. In a bowl, mix vegetable broth with 2 tablespoons of flour. Add broth to vegetables. Cook for 1 to 2 minutes. Pour mixture into precooked bottom crust. Place top crust over and trim, seal, and vent. Brush with nondairy milk. Bake for 30 to 40 minutes until golden brown. Enjoy!

Delicious. I didn't have time to make seitan, so I used tempeh that I marinated in leftover broth from a crockpot roast. Aside from that, I pretty much followed the recipe. I did add a little rubbed sage and a bit of nutritional yeast. I used Bell's Kalamazoo Stout as my beer. It was perfect. I'm sure I will make this again. Yum.
this is super delicious! reminds me of a stew my mom made when i was a kid - warm, comforting, and filling. i used a heavy hand with the thyme and rosemary and twice the amount of worcestershire. smelled awesome and tasted even better! i had way too much filling for one pie, so i intend to use the leftovers over some rice. in the future, i will probably plan ahead and buy extra crusts so i can freeze a back up pie. really great recipe - thanks!
I love this pie! I use Marie Collander's (spelling?) pie crust when in a hurry and they are really good in a pinch - better than most crusts I've had. I use different beers ranging from Boddington's Cream Ale to Black and Tan; I'm sure Newcastle would work as well. It doesn't matter terribly and Cream Ale is one of the few alcoholic drinks I can stand as an actual drink so I tend to buy that. Unfortunately, Guinness was the other and it's off-limits as its not vegetarian/vegan. But there are lots of stouts folks - here's an excuse to give them a try. Anyway, I highly recommend this.
