Steamed Kale Salad with Curry Peanut Dressing

What you need: 

1/3 cup natural chunky peanut butter
1/3 cup olive oil
1/4 cup apple cider vinegar
1/3 cup water
2 tablespoons liquid aminos
3 cloves garlic, crushed
3 tablespoons red onion, finely chopped
1 tablespoon tumeric
1 teaspoon ground coriander
1 teaspoon cumin
1/4 teaspoon cayenne pepper
1 bunch kale, sliced

What you do: 

1. Add all ingredients except kale to an empty jar. Cover with lid, and shake. If the mixture is too thick, add a little more water until it meets your ideal consistency.
2. Lightly steam the kale. It really takes no more than 5 minutes Beware of over-steaming as it will lose its color and subsequently most of its nutritional value.
3. Once soft, let the kale cool for a few minutes before tossing with the dressing. (you will have more dressing than needed)
I served it on a bed of scarlet quinoa with a drizzle of flax oil, and it's also great chilled!

SO HOW'D IT GO?

I also love this recipe, although I substituted 1 tsp of red curry paste (which I had) for the tumeric, cumin, coriander, and cayenne (some of which I didn't have).  The sauce is sufficient for two or more bunches of kale.  My wife, daughter, and I killed a large bunch of kale as a side to a dinner, and we could have eaten more.  We ate it chilled.  Yum!

I loved this recipe! Instead of steaming though I sauteed with chickpeas. Also, I used all the dressing but maybe shouldn't have. If I remake it I will make half the amount of dressing.

This was ok, I ate it warm with rice on the side. I like kale with a little lemon juice or peanut sauce better.
