Strawberry Cupcakes

What you need: 

2/3 cup almond milk
1/2 cup vegan vanilla yogurt
1/3 cup canola oil
1/4 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/4 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
2 tablespoons ground flax seeds
1/4 teaspoon salt
3/4 cup sugar

--Glaze--
2 tablespoons vegan margarine
3/4 cup powdered sugar
2 tablespoons almond milk
1/4 teaspoon almond extract
2 fresh minced organic strawberries

What you do: 

1. Fire up the oven to 350!
2. Put liners in the cupcake pan.
3. Mix up wet ingredients.
4. Mixmaster it!
5. Add all of the dry ingredients (SLOWLY) and mix. Do it until there are no lumps.
6. Fill cupcake liners 2/3 of the way.
7. Put it in the oven and wait 20 minutes.
8. Let it cool for 30 minutes.
9. Glaze it! Mix all glaze ingredients together, put them in the fridge for 30 minutes, then glaze.
10. Nuts on the top are optional.
