Strawberry Muffins

What you need: 

4 oz. unsalted margarine
1 1/4 cup sugar
1 banana
2 cup flour
2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup soy milk, with a little arrowroot as thickener
1 teaspoon vanilla
15 fresh strawberries, dry, coarsely chopped (about 2 cups)

What you do: 

Cream together margarine and vegan sugar until light and fluffy. Add the banana, and cream until well blended. Sift together flour, baking powder and salt. Combine soy milk, arrowroot and vanilla. Alternate adding wet and dry mixtures to creamed mixture. Fold in strawberries. Fill muffin tins nearly full, and bake at 375F for 25 to 30 minutes.

What would be a good replacement for the banana for those of us who can't eat or don't like bananas?  Thanks!

I would try using another type of berry like blueberry. Maybe even try almonds!  :)

I'm not sure of that's a good idea... The banana is probably being used here as an egg substitute. I also doubt that it would taste that strongly in this recipe that you would even notice it much.

I'm thinking about trying this recipe out but would like to substitute all of the flour with whole wheat and the margarine with applesauce. Has anyone tried this? And if so, how did they come out?

I subtituted both and they came out great! Although, I did use yogurt instead of soy milk. Either way, they were great with the applesauce and whole wheat flour :)

i love these muffins! i picked fresh strawberries and found this recipe that night. they came out delicious. i didn't have any soymilk, so i used vanilla soy yogurt (1/2 cup) instead. i figured it may hold the muffins together a little more since a lot of people said they were gooey. they are indeed not gooey, yet incredibly moist! thanks for the recipe!  ::)
