Strawberry Muffins

What you need: 

4 oz. unsalted margarine
1 1/4 cup sugar
1 banana
2 cup flour
2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup soy milk, with a little arrowroot as thickener
1 teaspoon vanilla
15 fresh strawberries, dry, coarsely chopped (about 2 cups)

What you do: 

Cream together margarine and vegan sugar until light and fluffy. Add the banana, and cream until well blended. Sift together flour, baking powder and salt. Combine soy milk, arrowroot and vanilla. Alternate adding wet and dry mixtures to creamed mixture. Fold in strawberries. Fill muffin tins nearly full, and bake at 375F for 25 to 30 minutes.

I didn't need the arrowroot either!

Made them mixed-berry instead of just strawberry and ended up with uber moist and yummy violet muffins. Also added a brown sugar/oatmeal crumble for a little extra texture.

Fantastic recipe! I will definitely be using this again!  ;D

i decided to make breakfast muffins today, so i chose this recipe; as we just bought some strawberries yesterday:)
i made recipe into 24 mini muffins, and 2 jumbo; with about 1 1/2 added tablespoons of wheat germ.
they are FUCKING DOPE!

I tripled this recipe for my two friends, and they turned out amazing. I didn't have the gooey issue because I ended up not even using strawberries. I was too cheap and too lazy to go get any. They were SO good. They had a light banana taste to them. I think next time I'll make a loaf... Amazing recipe.

I replaced 1/3 of the margarine with applesauce, and I think I added a little extra vanilla.

These muffins are great! I made them with 1 cup flour and 1 cup whole wheat flour...next time I am going to try using only the whole wheat flour. Yummy!! ;)

yummo! the best part was the batter!  it taste like SMOOTHIE KINGS ANGEL FOOD SMOOTHIE! wowee! my fave!  my tops were hard and the insides were undone but i'll try it again!

I made my first muffins today, but I couldn't decide on one flavour. I made a total of 9 with the following (each muffin has a different combination of flavours): strawberries, banana, biscuits, chocolate chips, vanilla extract, almond extract, coconut, cinnamon and coffee. They came out perfect! Thank you for the recipe, I made a few tweaks but nothing noteworthy.

I used brown sugar and wheat flour so they didn't look as pretty as the photos on here. But they were very good and even my bird approved.

Mine came out very gooey, which I think is great!  Because they expect a different sort of texture, I wouldn't recommend this recipe to try and impress omnivores who are suspicious of foods a vegetarian made.  But in general, I think these are excellent.
