Summer Scramble

What you need: 

1/2 pound soft tofu
1 1/2 cups of kale
less than 1/3 cup of sun dried tomatoes
3-4 medium sized shallots or 1/2 medium onion
1-3 garlic cloves
1/2 lemon
pepper to taste
salt or garlic salt to taste
cumin to taste
1/2 tablespoon extra virgin olive oil

What you do: 

All seasoning is to taste. I LOVE cumin so I add a lot!!
Preheat stove to low to medium heat.
Slice onions and dice garlic. Add olive oil to pan then add garlic and onions. Dice Kale to a nice medium size, after onions and garlic have a nice brown look add kale.
Crumble soft tofu in a bowl and add cumin, salt and pepper, and mix well to incorporate spices.
After the Kale has cooked a bit, add in tofu and let that cook with the other ingredients.
While those are cooking take out your sun dried tomatoes and dice them. After the tofu, kale, onions and garlic have mixed nicely and are cooked to taste, add in a little more pepper, salt and cumin, then proceed to add in the sun dried tomatoes, and mix together.
The tomatoes are basically there to add a little zing and extra flavor so you really don't want to cook them. Turn off stove and top with some lemon juice to add a nice summer taste!
