Summertime Chili

What you need: 

1 - 15 ounce can kidney beans
1/2 cup chopped red onion
1/2 cup chopped red, green, orange, or yellow sweet pepper
1/2 cup chopped tomato
1 to 2 tablespoon lime juice
1 tablespoon fresh cilantro
1 tablespoon fresh chives
Salt, pepper to taste
1 teaspoon cumin powder
2 teaspoons juice from jar of minced garlic
Hot sauce, to taste (optional!)

What you do: 

1) Rinse and drain beans and pour into bowl. Add all other ingredients and stir. Enjoy!
I enjoyed mine as a side-dish served over fresh spinach with a grilled portabella 'shroom. :)
Source of recipe: I was experimenting in the kitchen, looking to add some protein to my meal

SO HOW'D IT GO?

Love this idea!  The only things I did differently were using white navy beans instead of kidney beans and adding mushrooms.

This is great, so perfect for a hot summer day!  I added a fresh minced jalapeño to mine and used fresh minced garlic instead of the juice.  It was awesome as a meal with some stove-top skillet cornbread.  Really good topped with avocado and vegan sour cream.  Yum!!
