Sun Dried Tomato Pesto

What you need: 

1/4 cup fresh basil
10 cloves garlic
1/4 cup pine nuts
1 cup oil packed sundried tomatoes, with oil

What you do: 

1. Put garlic, basil and pine nuts in a food processor, process until ground fine.
2. Add tomato and process, adding reserved oil until mixture is a smooth paste.

SO HOW'D IT GO?

Super easy to make if you have a food processor! I didnt follow the recipe on the basil (I added extra). So good! I've made this at least 3 times so far! I eat mine with pita bread from trader joes (they have cheap pita) that i put in the toaster to make warm. Also leftovers taste even better than the day of cooking! (make a lot).

Wow!  this was the best pesto I'd ever had! I made it for  a dish that was suppose to be supper and then enough left over for lunch the next day....it became just one big meal!!!  I'm definitely making this again!!!

oh my, this was good. i only used 1/4c. of oil and sun dried tomatoes not oil packed, but instead rehydrated in veggie broth.

on an economical note, this was not inexpensive to make. 9 euros for all the ingredients, or roughly $13.
