Super-Easy Cheesy No-Boil Lasagna

What you need: 

1 (10 ounce) package vegan mozzarella cheese, shredded (I use Follow Your Heart Vegan Gourmet)
1 (10 ounce) package vegan cheddar cheese, shredded (I use Follow Your Heart Vegan Gourmet)
1 (32 ounce) jar pasta sauce, divided
1 (8 ounce) can tomato sauce
12 lasagna noodles, uncooked (no-boil if you can find)
2 (3 1/2 ounce) vegan Italian sausages, sliced thinly, divided (I use Tofurky)

What you do: 

1. Preheat oven to 450 degrees F. Combine the shredded mozzarella and cheddar cheeses together. Combine the pasta and tomato sauces. Spread a thin layer of sauce along the bottom of a 9x13” baking dish.
2. Cover bottom of dish with 1 layer lasagna noodles and spread a thin layer of pasta sauce over the noodles. Distribute 1/2 the sliced sausage over the sauce. Spread 1/3 the cheese mixture evenly over the noodles, sauce and sausage.
3. Repeat previous step. Finish with a layer of lasagna noodles and the remaining pasta sauce, ensuring that all noodles are covered in sauce. Top with remaining 1/3 cheese mixture.
4. Cover and bake for 45-50 minutes. Remove cover and bake on broil about 5 minutes, until cheese is lightly browned and bubbly (watch closely so it doesn’t burn!).
You can do much more to make this dish more interesting, but it's good for when you want some comfort food but don't want to have to do a lot of cleanup! I've taken it to potlucks and fooled many meat-eaters with it.

SO HOW'D IT GO?

This is a really good, quick, and yummy recipe! I think I'll add less cheese next time. Thanks for sharing! You don't really have to find 'no boil' pasta, just make sure that you cover the pasta completely with sauce. I usually use two bottles of sauce.

I just made this dish... :o  It is excellent.  I used a full package of Follow your heart mozzarella & only 1/4 of cheddar.  I also added 3/4 a block of tofu which I mixed with 1/2 a bag of frozen spinach.  I think next time I will use meatless meat balls or fake meat crumbles in place of the sausage.  It was very good though.  Thank you. ;)b

I just tried this. I made a smaller portion since the store was out of follow your heart mozzerella and used a different brand that was only 8oz. and added some baby portabello slices on top. Mine turned out a bit soupy but still good. I think next time im going to use double mozerella, no cheddar, and maybe some tofu to thicken it up... Yay! Lasagna!!!

Mmmmmm, tasty!

I omitted the sausage (I never liked meat in my lasagna, even when I was an omni), and added Vegan brand parmesean cheese. I made homemade sauce, and used lasanga noodles that needed to be boiled--more authentic.  :)

One tip I have when working with Follow Your Heart cheeses: If you press it like you press tofu (but not too much, only for a second), it'll be easier to shred and easier to handle. That's especially important in lasagna and pizza.

I seriously almost OD'ed on this last night; it was soooooo good. Lasagna was my FAVORITE food before becoming vegan, and since then I haven't even considered a substitute. But wow; out of boredom I tried this recipe and it tasted exactly like Lasagna, at least what I remember of it.

I used Monterey Jack Follow your Heart "cheese" instead of cheddar (alongside the Mozzarella), because I HATE vegan cheddar cheese with a passion, but it was still perfection. I also added about half of a package of firm tofu for more texture, and maybe 2 tablespoons of parsley. Oh, and I didn't add any mock meat because I've never liked meaty lasagna for some reason.

Loved how easy this recipe was. Also, I took the above poster's suggestions and heated my oven up to 450 degrees. I didn't keep track of how long I cooked it, though, just until the "cheese" bubbled.  :D You should really try this asap!

I just took this to a party tonight, and the omnivores ALL gave it rave reviews (every single one of them said it was better than the catered meaty, cheesey food!)  I recommend making the following changes:

- Add an 8 oz can of tomato sauce to mix the 32 oz jar of pasta sauce
- Increase oven temp to 450 degrees

I have been looking for a no boil recipe, thanks for posting it.  I will make it tonight, but will use vegetables instead of the sausage.  My family does not like sausage in their lasagna, even if it's soy based.
