Super Moist Pumpkin Banana Loaf (low gluten, tofu)

What you need: 

1/2 cup spelt flour
3/4 cup oat flour
3/4 cup rice flour
pinch salt
1 teaspoon cinnamon
1/2 teaspoon ground ginger (or 1 tablespoon freshly grated)
1/4 teaspoon each nutmeg, cloves
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1 cup pureed pumpkin
1/2 cup pureed silken tofu
1/4 cup oil
1/4 cup soy milk
1 ripe banana, pureed
3/4 cup sugar
1/2 cup vegan chocolate chips
1/2 cup chopped candied ginger or raisins (optional)

What you do: 

Preheat oven to 350F. Lightly grease and flour loaf pan(s).
Sift together dry ingredients.
Whisk together wet ingredients well.
Pour wet into dry and mix until just combined. Fold in chocolate chips, candied ginger or raisins, if using.
Fill pans and bake for 45-55 minutes or until toothpick comes out clean.
