Super Simple--Delicious Spanish Breakfast Tomato Sauce

What you need: 

5 plum tomatoes
2 cloves garlic
2 tablespoons olive oil
sea salt, to taste

What you do: 

1. Put the plum tomatoes in a blender and blend 30 seconds or until smooth. Transfer to a bowl.
2. Finely chop the garlic [do not garlic press as pressed garlic will make it taste 'hot'] and add to the bowl. Pour the olive oil into the bowl and stir. Add salt to taste.
In Spain they serve this with eggs. I eat it on tofu scramble or just on toast as a snack. I thought I would miss grilled cheese sandwiches when I went vegan but with this as a substitute.....I don't! It is amazingly tasty!!

Source of recipe: I figured this out after enjoying it in Spain at every breakfast buffet. It is like a burst of fresh tomato in every bite. Enjoy.

SO HOW'D IT GO?

For "Catalan toast" use this sauce on toasted baguettes. First add a drizzle of olive oil, then the tomato sauce. In bars, they use a small paintbrush to dab it on!
