Surprising Carrot Sandwich

What you need: 

1 teaspoon sweet mustard, optional
1 tablespoon hummus
2 slices whole wheat bread
1/2 carrot, grated
1/2 green onion, chopped
1-2 sprigs fresh cilantro, chopped
1 slice tomato
1 piece romaine lettuce

What you do: 

1. Spread the sweet mustard on one slice of the vegan bread. Spread the hummus on the other slice.
2. Layer the carrot, cilantro, green onion, tomato, and lettuce on the vegan bread and enjoy!
Bread is also good toasted.

This was a pretty mediocre sandwich - nothing special to me... I was looking forward to trying it for some time now - I finally made some hummus - but it just wasn't that great... Now last friday I had a really good open faced sandwich at this trendy little place in Amsterdam - that was a good sandwich - it was on this large flat bread - sort of like ciabatta - they spread the hummus on thick and then they topped it with grilled eggplant and tomato and sprinkled it with chives, salt and pepper... ahhh - so simple - and so sublime... that was special! ::)


Being the poor girl I am, all I had to make this recipe was the bread, carrots, lettuce, and mustard. I actually made a mixture with my food processor with the baby carrots, lettuce, and mustard, and I found that it makes a really excellent sandwich spread. :)


:P wow was this fantastic.  i have never tasted such a novel combination in my life.  so easy to prepare too.  i actually used the recipe on here to make cilantro hummus for this, so mine was extra green tasting as well.
