1 tablespoon rice vinegar
1 teaspoon sugar
1 cup steamed white rice
1/2 avocado, diced
1 large carrot, cut into matchsticks
1/4 to 1/2 cucumber, cut into matchsticks
1 sheet nori, cut into strips
Soy sauce, to taste
Pickeled ginger, to taste
1 tablespoon toasted sesame seeds
1) In a medium bowl, which together the vinegar and sugar. Add warm rice and mix into sweetened vinegar.
2) Top with avocado, carrot, cucumber, and nori. Add soy sauce and ginger to taste and garnish with toasted sesame seeds. Enjoy!
