Suz's Red Quinoa Curry

What you need: 

1 cup dry red quinoa
1 cup orange juice
1 cup water
1 large cube vegetable bullion
1/2 of a large white onion, chopped
1/8 cup raisins, packed
1/2 cup frozen peas
1/4 teaspoon sea salt
1 to 2 tablespoons curry powder (your favorite brand will do)

What you do: 

Rinse quinoa in a strainer to get the bitter outside off.
Throw all of the ingredients into a pot, bring to rolling boil, then reduce heat to medium-low and simmer for about 20 minutes or so until you can see the white rings on the outside of the quinoa. It took a little longer than 20 minutes on my stove.
I invented this as a side dish for dinner last night when I had no idea what else to make. Hubby who doesn't like curry even liked it!

I love the flavor of this dish. We added chickpeas to make it more hearty. The only problem I have is that my Quinoa did not "turn out" which has never happened to me before. The only thing I can think of is the new addition to the recipe didn't leave enough liquid for the Quinoa. Other than that, I love love the taste of this dish! :)

This recipe surprised me! It had all of these stand out ingredients and every single one of them were matches made in heaven! The only thing i found was that it needed some rice so I put it with brown rice with cashews and it was simply divine! I would defintely recommend that peopl try it!
