Sweet Coconut Curry

What you need: 

1 small can of pineapple (18 oz. / 500g)
2 big bananas
2 somewhat sour apples
3 tablespoons of brown sugar
1.5 oz. / 40g of raisins
1 can of coconut milk (1.7 cups / 400 ml)
1.5 oz. soy buttery spread
a pinch of turmeric
2 - 3 tablespoons of lime juice

What you do: 

Drain pineapple and keep juice. Peel fruit and dice.
Heat buttery spread over medium heat and fry fruit for 4 minutes. Only add the pineapple for a minute or so.
Remove the fruit from pan and pour 1/2 cup (100 ml) of pineapple juice into pan.
Add brown sugar, raisins and coconut milk. Let it simmer until creamy.
Season to taste with lime juice and turmeric and add fruit.

SO HOW'D IT GO?

Although I didn't have any limes or raisins, it was perfectly sweet and hit the s pot. I also didn't have any brown sugar (just got back from a vacation and have very little in stock), so I used maple syrup instead. The tumeric added the perfect hint of the exotic.
