Sweet Pea Pesto

What you need: 

1 cup sweet peas
1/2 cup basil leaves
1 tablespoon grapeseed oil
2 teaspoons garlic powder
1 teaspoon lemon juice

What you do: 

1. Combine all ingredients in a food processor.
2. Blend until well mixed. It's ok to have a few chucks of peas and basil. This is not meant to be a liquidy sauce.
Mix with 3 cups cooked pasta. You can top it with some vegan parmesean cheese or even add the cheese during the processing.

SO HOW'D IT GO?

This was an innovative healthful recipe.  I added nutritional yeast, soy milk, more basil, cherry tomatoes and topped it with toasted almonds.  I enjoyed it.

This is awesome! I had to fudge with it a bit because of what I had available, but I'm looking forward to trying it when I have fresh, not frozen, basil and fresh garlic. I did add a bit of salt, and some nutritional yeast. It's nice to find a pesto recipe that uses cheap ingredients.

I made this recipe and have been munching on it all week (I made a triple batch to use up the basil that we had growing).  I used raw garlic instead of the granulated stuff and less oil to keep it chunky for dipping.

I used this pesto for these stuffed mushrooms, http://vegweb.com/index.php?topic=4747.0 and they were delicious with the unique taste of pea pesto.
