Sweet Potato Salad

What you need: 

2 large yams, well scrubbed and roughly chopped
4 medium red potatoes, well scrubbed and roughly chopped
4 green onions, chopped
1/2 red onion, finely chopped
1/2 cup celery, finely chopped
1 cup frozen corn, thawed
1 cup frozen peas, thawed
1 cup soy vegan mayonnaise
Salt to taste
White pepper to taste
Cayenne pepper to taste

What you do: 

Cook the yams and red potatoes together until soft, drain and soak in cool water. Meanwhile, thaw the corn and peas. Chop the green onion, red onion and celery. When the potatoes are cooled, combine all the ingredients in large bowl until mixed well. Refrigerate and serve. Great the next day too!

ok so i didn't peel the yam because the directions didn't say to so the yam was kinda gross with the skin on... maybe it's a no brainer?!?! So DON'T FORGET TO PEEL THE YAM!

Also, i strongly recommend adding sweet relish to taste and maybe less of the corn and peas... like 1/2 cup each? I will make this again with modifications... maybe even leave the sweet potato out... i dunno... 4 out of 5 stars, thanx <3
